Welcome to
Fireside Catering!
Having opened our first restaurant overlooking our family's
Black Angus cattle farm, we have always had an appreciation
for the incredible flavors and quality of food grown on New
England farms.
At our critically-acclaimed restaurants, the Gibbet
Hill Grill and the Scarlet
Oak Tavern, and our award-winning function facility, the
Barn
at Gibbet Hill, we strive to showcase local farms and producers.
We bring that same approach to Fireside Catering.
Whether serving an elegant fall harvest dinner in a beautiful
historic estate by the sea or an abundant summer feast in a
backyard garden, Fireside Catering provides farm-fresh ingredients,
elegantly plated dishes, and courteous and friendly service
to complement the gorgeous settings you have chosen for your
event.
Who We Are
Tim Dodge - General
Manager
Tim brings over 20 years of catering experience to Fireside.
His career started in the kitchen, working as a cook and later
as a chef in a number of restaurants central to the North
Shore dining scene. From there, he moved to the front of the
house, where for ten years, he served as General Manager at
Celebrations Gourmet Catering in Beverly, MA. Tim has executed
thousands of events in hundreds of venues, and in virtually
every capacity possible. He has a passion for delivering on
his client's expectations, and the skill and experience to
do it.
Ethan Paige -
Executive Chef
Ethan grew up surrounded by charismatic and talented chefs,
beginning with his mother, who has been the Food Service Director
for Deerfield Academy for over 28 years. Ethan's experience
spans from Walt Disney World to Cameron Mitchell Restaurants
- a thriving national multiple concept operator based in Columbus,
Ohio - to Legal Seafoods, and most recently Dominic & Anthony's
Custom Catering where he was Executive Chef.
Ethan is an active member of the ACF and the Epicurean Club
of Boston where he enjoys the camaraderie of many of the great
chefs in the Boston area. His goals are to continue to grow
as a creative chef, to employ and wrestle with new ideas and
approaches to difficult problems we face in and out of the
kitchen, to be increasingly conscientious about sustainability,
local farms and local sourcing and balancing organic food
into the menus at Fireside.
The Webber
Family - Owners
The Webber family first became involved in the culinary scene
when brothers Josh and Jed renovated two turn-of-the-century
barns located on the family's Black Angus cattle farm into
the Gibbet Hill Grill and the Barn at Gibbet Hill. They were
an instant hit, with the Grill earning the highest rating
of any steakhouse in the Boston area by Phantom Gourmet, and
the Barn being voted best wedding venue in the Boston area
by CBS4's A-List. Following that, Josh and Jed, along with
Jed's wife, Asia, opened the Scarlet Oak Tavern in a 250-year
old colonial home located on Hingham's historic Main Street.
Fireside Catering is their third venture, allowing the award-winning
cuisine and service found in the restaurants to be brought
nearly anywhere in Massachusetts and beyond.
What We Do
First and foremost, it's about the cuisine. Our passion and
commitment is to local seasonal ingredients. Whether preparing
an elegant braised lamb dish for a holiday party, or a Verrill
Farms heirloom tomato and house-cured BLT slider for a summer
wedding reception, our farm-to-fork perspective is reflected
in the intense flavors and freshness of our dishes.
In addition to the cuisine, our planning staff can seamlessly
coordinate as needed with any outside companies necessary to
provide you with the precise ambiance you desire. The combined
thousands of events that our team has executed gives us a wealth
of experience that will result in the flawless execution of
your event from the initial planning stage to the last espresso
served.
Weddings
Weddings are our passion. Whether your wedding is large or
intimate, formal or casual, in an historic estate or on a beach
by the sea, Fireside Catering will make it perfect for both
the setting and for your unique tastes.
Beyond providing exceptional food and service, we can coordinate
with virtually any vendor to provide that any items needed to
make your day just right. Our combined decades of experience
will ensure that your day runs smoothly and seamlessly. We worry
about the details and let you enjoy your day.
Private Parties
We at Fireside Catering think of in-home entertaining as your
chance to shine. It is a unique opportunity to show the beauty
of your home and make lasting memories. As such, we take care
of all the details, from our silent and efficient set-up to
the end of the night when the last employee walks out of your
spotless kitchen. We make sure that you are part of the party,
not part of the production.
Corporate Events
At Fireside Catering, we understand that there are many different
types of corporate events with many different feels. From launch
parties, to intimate thank you dinners, to corporate-wide holiday
parties, we understand the need for the look and feel of the
event to both match its purpose as well as reflect your good
judgement. Our combined decades of experience ensure that your
event will be executed professionally and set the precise tone
that you wish.
Fundraisers
We understand that fundraising galas can be one of the most
significant events of the year for an organization. The experience
of your patrons and guests are of utmost importance. For this
reason, we at Fireside Catering are meticulous in our planning.
We will ensure that the evening runs flawlessly and professionally,
leaving guests with nothing but positive impressions and lasting
memories.

"Our holiday party was a smashing success from the moment
the guests arrived to the last dance of the evening. Thank you

left to be found!"

that they had been to. I believe that was because of you and
your staff making everything seamless." - G.N.
"Thank you so much for helping put together the wedding of

you for guiding me through every step of the way."
"Thank you again for the most fabulous wedding! New Year's
Eve was enchanting from start to finish. We have been inundated

you so very much."

better than your 'typical wedding food'". - G.N.
"The chef prepared the finest meal from pumpkin soup to a praline
topped dessert that left one guest saying, "All my senses thank
you, especially my sense of taste." The wait staff went above
and beyond to make sure all special meal and allergy requests
were filled. They were welcoming and professional throughout
the evening"
"Our event was flawlessly managed, which enabled us to really
enjoy the evening without having to worry whether things were
happening as planned. Your staff was friendly, efficient and
helpful without being obtrusive, and they all had a great celebratory
attitude."
Our Farm
Our farm is called Gibbet Hill Farm. It has been running continuously
since 1948 as a Black Angus cattle farm. In the 1980's, corn
was planted as the first produce from the farm. Today, the farm
is home to about 30 head of Black Angus cattle, and in addition
grows a good deal of produce for our other businesses, the Gibbet
Hill Grill, the Barn at Gibbet Hill, Fireside Catering, and
the Scarlet Oak Tavern. The philosophy in all of our businesses
is to use local, all-natural produce whenever possible. Our
commitment to this not only helps the environment, the local
economy, and the health of our patrons, but most of all, it
provides for the best tasting food possible! Click
here to see what we are growing and when we are harvesting this
year.
We use this harvest calendar extensively to help our clients
plan out their menu according to what will be in season as of
the date of their event. Obviously, as this is a real working
farm, our harvest dates are subject to change as the season
progresses. If an item that we are growing for an event becomes
unavailable from our farm, we can source it locally from the
dozens of farms we
work with in the area.
Farms We Work With
We are a strong believer in using local, organic
farms for as much of our sourcing as possible. Yes, it better
for the environment because food doesn't get shipped around
the globe. Yes, it's healthier because we're not exposing you
to pesticides and other chemicals. But more than anything else,
we believe that New England produce, in season, is simply a
superior product in terms of taste and freshness. It can't be
beat.
The main source of our produce in season comes
from our own Gibbet Hill Farm. However, we have extensive relationships
throughout the farming community, both as a customer as well
as a peer, that we use to access a broader list of local ingredients.
